Genetics Linked to LDL Cholesterol Changes on Low-Carb Diets
New research presented at NUTRITION 2026 shows that individual genetic backgrounds may influence how saturated fat affects LDL cholesterol levels during low-carbohydrate diets. The study analyzed data from participants in the DIETFITS randomized controlled trial.

New research investigating the complex relationship between genetics, saturated fat, and low-carbohydrate diets was presented at NUTRITION 2026, the flagship annual meeting of the American Society for Nutrition. The scientific presentation focused on how individual biological variations might dictate the body's cardiovascular response when adopting a diet that restricts carbohydrate intake while potentially altering the consumption of saturated fats.
The study specifically analyzed data gathered from the DIETFITS randomized controlled trial, which originally involved more than 600 adults. From this broader group, researchers focused on a subset of 431 DIETFITS participants for whom complete genetic data were available, allowing for a detailed examination of genetic markers in relation to dietary outcomes over the course of the one-year trial diet.
According to Alexa Barad, the findings indicate that specific genetic backgrounds may make certain individuals significantly more sensitive to the LDL cholesterol-raising effects of saturated fat, particularly when that fat is consumed in the context of a low-carbohydrate regimen. The investigation specifically examined changes in low-density lipoprotein cholesterol from baseline over a timeframe of six months.
Current dietary guidance generally recommends keeping saturated fat below 10 percent of total daily calories, a standard supported by organizations such as the American Heart Association. The new research adds further nuance to these nutritional guidelines by demonstrating that population-wide dietary advice interacts differently with individual physiology.
Elaborating on the broader implications of the work, Alexa Barad noted that the discoveries highlight real heterogeneity in how people respond to diet. Dietary conversations can sometimes become overly simplified, with one person claiming that low-carbohydrate diets always raise LDL cholesterol while another reports no change at all. Barad emphasized that the findings suggest both experiences can be true, depending at least in part on the individual's genetic makeup.
The research builds upon a collaborative scientific framework involving several major institutions. Funding and support for the overarching research efforts associated with the trial and related studies have previously involved the Stanford University School of Medicine, the National Institute of Diabetes and Digestive and Kidney Diseases, the National Heart, Lung, and Blood Institute, and the National Institutes of Health.
