In the heart of Tangail, alongside the road near the Tangail District Judge Court, a unique local delicacy known popularly as 'District Cake' has been capturing the attention and appetite of residents and visitors alike. Scientifically and traditionally referred to as Chapri Ruti, this distinct culinary creation has firmly established itself as a beloved fixture of the local street food landscape, drawing in a diverse crowd of daily consumers ranging from university students to professionals working in the surrounding judicial area.

The preparation of this renowned local specialty involves a specific blend of ingredients and traditional cooking techniques that have been passed down and perfected over time. The fundamental base of the Chapri Ruti is rice flour, which is carefully combined with all-purpose flour (maida), ground lentils, turmeric, salt, and black cumin seeds. To achieve the daily demand, the preparation process is remarkably large-scale, with cooks and food preparers mixing approximately two maunds of dough every single day to keep up with the steady and enthusiastic stream of customers.

Unlike many traditional flatbreads or street foods that are typically deep-fried in oil, the Chapri Ruti is cooked through a distinct, smoke-infused method. The prepared dough is cooked strictly on clay stoves utilizing wood fires, which imparts a unique texture and flavor profile to the finished flatbread. Furthermore, the sheer physical scale of the final product often surprises newcomers, as the size of these individual chapris can vary significantly, with some measuring an impressive 24 inches across while others reach up to a remarkable 36 inches in diameter.

When it comes to serving, the Chapri Ruti is traditionally paired with a selection of flavorful accompaniments designed to complement its smoky and savory taste. The massive flatbreads are typically served alongside mashed potatoes (alu bharta), coriander leaf mash (dhonepatay bharta), fresh raw onions, and green chilies. This combination provides a hearty, flavorful, and complete meal that has proven exceptionally popular among people looking for a satisfying bite during their busy days in the town.

Despite its large size and rich preparation process, the street food remains remarkably accessible to the general public due to its exceptionally low price point. Patrons can purchase a generous portion consisting of a large piece of chapri served along with bharta for a mere 25 taka. Local regular customers, such as Matin Mia, have praised the unbeatable combination of cost and quality, remarking that there is simply no better or tastier food available anywhere else for such a remarkably low price.
