Market research data highlights the impressive velocity of this trend. According to findings from Circana, banana has established itself as the single fastest-growing flavor across restaurants over the past year, reflecting a sweeping change in consumer preferences nationwide.
Further underscoring this widespread industry adoption, data from Datassential reveals that between July 2025 and July 2026, leading café chains introduced approximately 100 distinct banana-flavored items to the market. High-profile industry giants have actively participated in this wave, with Starbucks launching the iced banana bread matcha and Wawa introducing the banana bread coffee.
Local establishments are also feeling the direct impact of this consumer enthusiasm firsthand. Christi Grimley, a barista at Bay Baris in Margate City, New Jersey, observed the strong seasonal demand from patrons.
"The most popular drink this summer is this banana-flavored coffee," Christi Grimley stated, capturing the immediate resonance the beverage has found with customers visiting the Jersey Shore location.
Elaborating on the unique sensory appeal that sets these offerings apart from traditional syrups, Grimley added detailed insight into the flavor profile:
"This coffee's taste is not like any artificial flavor, but rather authentic like banana bread and, with the oat milk that goes with it, it gets a great brown flavor," Christi Grimley explained.
